Banana Whole Wheat Waffles or Pancakes
1 cup whole wheat flour
1/4 cup brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 ripe banana
1 egg beaten
1/2 cup buttermilk
1/2 cup milk
2 tbsp. begetable oil
chopped walnuts if desired
combine dry ingredients, mash bananas , add wet ingredients to dry ingredients and then the mashed banana. Batter will be slightly lumpy. Use this as pancake batter or with waffles. I make waffles and freeze them and pop them into the toaster. Delicious recipe.
High Protein Refrigerator Muffins
2 C. dry oatmeal
2 C. Shredded Wheat, broken up
2 C. All-Bran
1/2 C, wheat germ
1 C. boiling water
1 C. salad oil
2 C .brown sugar
1 qt. buttermilk
4 beaten eggs
5 tsp. baking soda
1 TBSP salt
1 tsp. cinnamon
5 C. four
This recipe will keep fresh in an air-tight container in the fridge for a month, so you can bake as many or as few mufins as you wish. Nuts, raisins, dates, mashed banana, applesauce, or additional spices can be added at the time of baking.
In a very large bowl, mix the oatmeal, shredded wheat. all-bran and whear germ. Pour boiling water over the cereals,. Stir in salad oil, brown sugar, buttermilk and beaten eggs. Mix together soda, salt, cinnamon, and flour. Add the cereal mixture. Put in greased muffin tns and bake at 400 degrees for 20 minutes. Note: This recipe tends to stick to paper muffin cups, so I don't recommend those. For best results, make sure your oven is completely preheated before you begin baking. )
